Parmesan Tuna Cakes is a fast, easy, and tasty clean eating recipe. Parmesan Tuna Cakes are absolutely for kid-friendly, serve with a tuna burger with home-made mayonnaise sauce. It’s also budget-friendly for the whole family meal.
How to make Parmesan Tuna Cakes
- Drain tuna: Drain the liquid from the tuna cans. If you are using tuna packed in water, reserve a tablespoon of the tuna water, and add a teaspoon of olive oil to the tuna mixture in the next step.
Mix mackerel, onion, tuna, Parmesan cheese, home-made mayonnaise, eggs, Dijon mustard, seasoning blend, paprika, essential oils, and basil together in a bowl. Add pork rind crumbs, 1 to 2 tablespoons at a time, until mixture holds together. Form mixture into balls and flatten into 1/2-inch-thick cakes.
Heat a large non-stick frying pan over medium-high heat and grease with cooking spray. Arrange cakes in the hot frying pan and spray each cake with cooking spray.
Cook cakes, working in batches if needed, in the hot frying pan until browned, 3 to 5 minutes; gently flatten cakes with the back of a fork. Flip cakes and cook until another side is browned, 3 to 5 minutes.
- Transfer cakes to a paper towel-lined plate.
Serve with wedges of lemon. You can also serve with home-made mayonnaise sauce on slider buns for a tuna burger.

- In a hot saucepan over medium heat, combine red peppers, onion, oil and butter; saute for 2 minutes. Reduce heat to medium-low and continue cooking, stirring occasionally, until the onions and peppers soften.
- If desired, stir red wine into the vegetables and cook until the wine evaporates; approximately 30 minutes. Season with salt, pepper, and basil.
